The evening begins at 6 pm on Friday, November 7 at McCoy Farm and Gardens.

The fires will be lit earlier that day; you will see them burning, little pockets of wood and warmth, as you enter the garden grounds.

The stars will emerge overhead. The sounds and smells of meats and vegetables cooking over fire — on vertical racks and horizontal grills — will mix in with that unmistakable smell of fall.

An opening cocktail from Chattanooga Whiskey. Bottles of wine from Imbibe. A long white-tableclothed place to sit, laugh, drink and eat.

Somatically, your body exhales, relaxes. This is asado.

Behind it all? Your hosts for the evening?

Mariano and Angelina Cebrián from Panoram Asados.

"I felt like I was in a movie," Angelina said of her first asado. "It was like Anthony Bourdain was going to pop out."

"Asado is a feeling. An experience," said Mariano. "Time for us to slow down and have time for each other.

"It is like a fairy tale."

Members of The Table were given first-access to tickets; now, the event is open to all our Food as a Verb community.

"Women in the Industry: a Conversation" was recorded as part of our ongoing Speaker Series at Little Coyote.

Both women are industry-makers and shakers, having influenced and impacted Chattanooga's restaurant scene in immeasurable ways.

During our conversation, they were honest, insightful, empowering, defining hospitality, encouraging audience members to stop apologizing while staying true to ourselves and stepping boldly into the life before us.

  • Finally, a standing ovation to Madison Baldwin of Southeast Tennessee Young Farmers, who wrote a piercing, insightful critique of Plan Hamilton. It's the best criticism I've read yet.

"The current iteration of Plan Hamilton fails young, beginning, current and future farmers. By excluding agriculture from Plan Hamilton, the county is essentially abandoning the future of agriculture in this community," she writes in On Behalf of Agriculture.

There's still time to communicate with county commissioners, who will vote again on final passage, or not, of Plan Hamilton.
