Earlier this winter, we had a fabulous time with Bill and Wanda Lee at Gate Eleven Distillery.

We toured the distillery, listened as Bill and Wanda told their spirited stories — moonshiners, greenhouses, the banks of Soddy Creek — about returning home to begin making spirits.

We tasted their new absinthe during a Louche Ceremony. (Tonight's event is sold-out.)

We loved it so much, I reached out to Southern Living. Ya'll should really know about this, I said.

I called up Darek Bell and his team at Corsair Distillery in Nashville. They distill their own red absinthe. We had a great time talking.
